About John

I trained at Ballymaloe Cookery School in Ireland—the birthplace of the modern farm-to-table movement. Since then, I've cooked in Los Angeles, France, and Dublin, learning from diverse culinary traditions while always returning to the same principle: start with exceptional ingredients and let them shine.

Now based in Norwich, I bring that philosophy to private dining across Norfolk. I source from local farms, fishermen, and producers to create seasonal menus that reflect the best of what's available right now.
